Wild Rice Soup Recipe:
5 cups cooked wild rice
1/3 cup butter
1/4 cup minced onion
2/3 cup flour
2/3 gal. chicken stock
2 cups whipping cream
2/3 cup dry sherry wine
Minced parsley
Salt and pepper
Method:
Melt butter in sauce pan. Add onion and saute until light brown in color. Blend in flour. Add broth stirring constantly until slightly thickened. Stir in rice and simmer for ten minutes. Blend in cream and sherry, simmer until thoroughly heated. Garnish with minced parsley.
