Zucchini Bread Recipe:
- 3 Eggs
- 2 Cups Sugar
- 3 Cups Flour
- 1 Cup Vegetable Oil
- 2 Cups grated raw Zucchini
- 3 Tsp. Vanilla
- 1 Tsp. Salt
- 1 Tsp. Baking Soda
- ¼ Tsp. Baking Powder
- 3 Tsp. Ground Cinnamon
- 1 Cup coarsely chopped Walnuts
Method:
Beat eggs until light and foamy. Add sugar, oil, zucchini, and vanilla. Mix lightly. Combine flour, salt, baking soda, baking powder, and cinnamon and add to zucchini mixture. Blend well. Add nuts and place in two loaf pans. Bake at 350 for 1 hour. Cool immediately on rack. Freezes very well.
